Red velvet cake


Red velvet cake

1 1/2 cup oil
1 1/2 cup sugar
2 eggs
2 1/2 cups plain flour
2 tbsp cocoa
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup buttermilk
1 tsp vinegar
1 tsp vanilla
1 large red food coloring

Mix oil, sugar and eggs, then add other dry ingredients. Mix well. Add buttermilk, vinegar, vanilla and food coloring. Mix well. Bake in 2 round pans at 350 degrees for 25 minutes or until toothpick comes out clean.


Cream cheese icing

1 box powdered sugar
8 oz cream cheese
1 stick butter
1 tsp vanilla
1 tsp milk
1 cup pecans

Mix first 5 ingredients together and spead on cooled cake. Top with pecans

Tator tot casserole


Tatot tot casserole

2 pounds hamburger meat
1 can cream of mushroom
1 can cream of celery
8 oz cheddar cheese
tator tots


Cook meat and drain. Mix in cream of mushroom and celery and pour in a 9x13 pan. Cover with cheese and arrange tator tots on top. Cook in 350 degree oven until the cheese is melted and tator tots are done

Meatloaf wellington


Meatloaf wellington

3 eggs
1 can cream of mushroom soup
1 cup seasoned bread crumbs
1 onion
salt and pepper to taste
2 tsp worcestershire sauce
3 lbs lean ground beef
2 cans crescent rolls

Heat oven to 350 degrees. In large bowl combine eggs, soup, bread crumbs and seasonings. Add meat and mix well. Shape into loaf in pan and bake for about 1 1/2 hours and remove from oven and let cool in pan for 5 minutes. Move onto a cookie sheet and place crescent rolls covering the top. Bake for 15-20 minutes

Gailic mashed potatoes


Garlic mashed potatoes

3 lbs red skin potatoes
1/2 cup milk
2 tbsp butter
2 cloves garlic
salt and pepper to taste

Cut potatoes into chunks and boil until tender. Drain and put back in the pot they were boiled in. Boil together milk, butter and garlic and pour over potatoes. Add salt and pepper and mash

Roach pie


Roach pie

1 gallon vanilla ice cream- softened
8 ounces cool whip
1 pack of oreos- crushed

Mix and put in a 9x13 pan and freeze

Broccoli salad


Broccoli salad

flowerettes from 1 bunch of broccoli
1 cup raisins
1/2 cup chopped pecans
3 green onions
1/2 cup sunflower seeds

Dressing
1 cup mayo
1/4 cup sugar
1/4 cup red wine vinegar


Toss together all ingredients and add dressing

Baked potato casserole


Baked potato casserole

8 potatoes, peeled, cooked and cubed
2 cups cheddar cheese
1 cup mayo
1 cup sour cream
1 bunch green onions
1 bag real bacon bits

Mix potatoes, mayo, sour cream, green onions, bacon bits and 1 cup cheese. Put in baking dish and cover with the rest of the cheese and bake at 350 degrees for 30 minutes.

MLK day


Since it is Martin Luther King day, I thought that a king cake would be very appropriate for the day. So here it is. Lemon filled and very yummy (:

The family and I will be grilling later on. BBQ chicken and potato casserole. I'll try to get the potato casserole on here later tonight. Its really good.

So thats it for now but there's more to come later.

Florentine stuffed shells


Florentine stuffed shells

1 jar spaghetti sauce
1 box jumbo stuffing shells
1 pound ricotta cheese
parmesan cheese
2 eggs
parsley
salt
1 pack cooked frozen spinach
1 pound mozzarella

Combine ricotta, parmesan, half of the mozzarella, eggs, parsley, salt and spinach. Cook shells according to package directions but a few minutes less so that shells will be firm. Drain, be sure to not overcook- they will finish cooking in the oven. One shell at a time stuff with mixture. Pour half of the sauce in a 9x13 pan and arrange stuffed shells on top. Pour remaining sauce over shells and top with the rest of the sauce and cover with foil and bake at 375 degrees for 30 minutes.

Grannys lemon cake


Grannys lemon cake

1 box lemon supreme cake mix
1 1/3 cup apricot necter
1/3 cup oil
3 eggs

Icing
juice from 2 lemons
powdered sugar

Preheat oven to 350 degrees. Mix all ingredients and pour into a greased bunt pan. Bake until toothpick comes out clean than turn cake onto a plate. Make icing thin and while the cake is still hot pour some of the icing on top of the cake then cool completely and thicken icing with powdered sugar then pour some more icing on top of the cake.



Italian cream cake


Italian cream cake

1 stick margarine
1/2 cup vegetable shortening
2 cups sugar
5 egg yolks
2 cups flour
1 tsp baking soda
1 cup buttermilk
1 tsp vanilla
1 package coconut
1 cup chopped nuts
5 egg whites, stiffly beaten

Cream margarine and shortening, add sugar and beat until mixture is smooth. Add egg yolks and beat well. Combine flour and soda, add to creamed mixture alternately with buttermilk. Stir in vanilla. Add coconut and nuts. fold in egg whites. Pour batter into 2 greased round pans. Bake at 350 degrees for about 25 minutes.

Cream cheese frosting
8 ounces cream cheese, softened
1 stick margarine
1 box powdered sugar
1 tsp vanilla
1 cup chopped nuts

Beat cream cheese and margarine until smooth, add sugar and mix well. Add vanilla and beat until smooth. Stir in pecans and spread on cooled cake.






Cocolate chip cookie dough cheescake


Hey everybody. I'm Rachal and I'm starting this blog to share my recipies with everyone. I hope you all enjoy them. This is a cheescake that i made for Christmas and its super yummy.


chocolate chip cookie dough cheesecake

2 tbsp. butter
2 1/2 cups oreo cookie crumbs
2 pounds cream cheese
1 cup sugar
4 eggs
1 tsp plain flour
1 tsp vanilla
1 cup sour cream
1 pound chocolate chip cookie dough
2 ounces chocolate chips

Heat oven to 325 degrees. Generously grease the bottom and sides of a springform pan. Combine butter and cookie crumbs and press into bottom and sides of pan. Using an electric mixer on high speed combine cream cheese, sugar, eggs and flour until smooth. Add vanilla and sour cream and mix until just blended. Pour half of the batter into pan. Cut cookie dough into golfball size chunks and drop onto batter. Sprinkle in chocolate chips. Pour remaining batter into pan. Bake for 60 minutes then turn the oven off and open the door a little and leave cake in oven 30 more minutes. Refridgerate 4-5 hours or overnight. When ready to serve run a knife around the edges of the pan and remove the cake from the pan. Melt a few chocolate chips and drizzle over the top.
